明明都是高麗菜,怎麼市場上有分尖頭和扁頭兩種高麗菜呢?

其實二者的差異,是來自溫度造成生長的變化。通常尖頭高麗菜來自高山,扁頭高麗菜來自平地,不過在日夜溫差大的平地生長,也會長出來呈尖頭樣貌,通常尖頭高麗菜是因為日夜溫差大,導致心與葉的生長速度不一而造成,入夜溫度下降,外圈葉子停止生長,內圈葉子卻還在發育,就會產生這個情況,而造成甜度較高,也比較脆口。所以不要看到尖頭高麗菜,就以為是高山高麗菜啦!畢竟價格有很大差別喔!
